Historically, the farmers mounded the plants up with soil. Light can not enter at any degree. If so, you have the standard green. In the country side, you see rows of waist high mounds.
It appears that black plastic is being used instead of only soil mounds. While I believe this would be the less labor intensive method, someone still needs to harvest by hand as shown above.
White Asparagus! Covered to not let any light in!
White Asparagus is phenomenal. In Germany, farmers call this "White Gold". It's rare and only available for a short period early spring. It is extremely tender and tastes great blanched with a white sauce or I've had them pickled. Just delicious either way.

I would just like to try it. Growing an entire row under dark. The German side of me craves these old foods.
