Microgreens! Salad with sprinkled greens!
I've been growing a small quantity indoors every year. They are mini boosts of vitamins! And they taste really good on a sandwich. Swiss Chard, beet, radish, and cabbage pop up in days. I tried mixing them once but because of different germination times, they didn't all pop up at the same time. I recommend using Johnny's Seed guide when growing. They have a huge assortment of seeds that grow perfectly into microgreens.
A few years ago, we attended a farm field day at Heritage Prairie Farm and they had trays full of these delectable tasty treats. They sold them to Whole Foods but at the prices for a few ounces, this is reason 98 to farm. Grow your own!
